Don’t continue beating unnecessarily after reaching stiff peaks.

Heavy cream can eventually become grainy and begin turning into butter when severely overwhipped.

Set the whipped cream aside.

Step 3: Beat the Cream Cheese

Place 4 ounces softened cream cheese into another mixing bowl.

Beat until completely smooth.

Scrape the sides and bottom of the bowl as needed.

Starting with a smooth cream cheese base is one of the most important steps for preventing lumps in the finished fluff.

Step 4: Add the Sweetener

Add 2 tablespoons powdered zero-calorie sweetener.

Beat until thoroughly incorporated.

Taste later before deciding whether you need additional sweetness.

Step 5: Add the Lime

Add:

  • 1 tablespoon fresh lime juice
  • 1 teaspoon finely grated lime zest
  • 1/2 teaspoon vanilla extract
  • Tiny pinch of salt

Beat until everything is smooth and evenly incorporated.

The mixture should smell strongly of fresh lime.

Step 6: Adjust the Sweetness

Taste a tiny amount of the cheesecake base.

If you prefer a sweeter dessert, add a little more powdered sweetener or 2–3 drops liquid stevia.

Remember that the unsweetened whipped cream will slightly dilute the sweetness once it’s folded in.

Step 7: Fold in Half of the Whipped Cream

Add approximately half of the whipped cream to the cream cheese mixture.

Using a silicone spatula, gently fold it through the mixture.

The first addition loosens the heavier cream cheese base.

Don’t worry about preserving every air bubble during this first addition.

Step 8: Add the Remaining Whipped Cream

Add the remaining whipped cream.

Fold more gently this time.

Use broad movements:

Cut through the center → scoop underneath → fold over the top → rotate the bowl → repeat.

Continue only until the mixture looks uniform.

Avoid vigorous stirring.

The more aggressively you mix, the more air you’ll remove from the whipped cream.

Step 9: Portion the Cheesecake Fluff

Divide the mixture between two small dessert cups, ramekins, or glasses.

You can spoon it directly into the cups or pipe it in with a piping bag for a more polished presentation.

Step 10: Chill

Refrigerate for 15–30 minutes.

You can eat the fluff immediately, but chilling improves the texture.

The cream cheese firms slightly and the mixture becomes thicker and more cheesecake-like.

Step 11: Garnish and Serve

Immediately before serving, garnish with a little extra freshly grated lime zest.

You can also add:

  • A small swirl of unsweetened whipped cream
  • A thin lime slice
  • A tiny mint leaf

Serve chilled.
