- 1 cup orzo pasta
- 1 cup ricotta cheese
- 2 cups mixed vegetables (e.g., spinach, bell peppers, carrots, zucchini)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cook orzo pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and mixed vegetables; sauté until tender, about 5-7 minutes.
- Combine cooked orzo, sautéed vegetables, ricotta cheese, mozzarella cheese, Parmesan cheese, Italian herbs, salt, and pepper in a large bowl. Mix until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.
- Garnish with fresh basil before serving.
