- 1/2 cup crushed pineapple, drained

- 1/4 cup brown sugar
- 1/4 cup butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Cream sugar and softened butter together until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Combine dry ingredients in another bowl and gradually incorporate into the butter mixture.
- Mix brown sugar and melted butter in a small bowl.
- Prepare muffin cups by adding a small amount of the brown sugar mixture, followed by pineapple and cherry pieces.
- Fill each cup with cookie dough evenly.
- Bake for 10-12 minutes until golden brown.
- Cool slightly before transferring to a cooling rack.
Notes
Chill the dough a day in advance for better flavor. These cookies can also be made in an air fryer at 320°F (160°C) for 8-10 minutes.
