Ingredients

  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup cherries, halved
  • 1/4 cup brown sugar
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream sugar and softened butter together until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Combine dry ingredients in another bowl and gradually incorporate into the butter mixture.
  5. Mix brown sugar and melted butter in a small bowl.
  6. Prepare muffin cups by adding a small amount of the brown sugar mixture, followed by pineapple and cherry pieces.
  7. Fill each cup with cookie dough evenly.
  8. Bake for 10-12 minutes until golden brown.
  9. Cool slightly before transferring to a cooling rack.

Notes

Chill the dough a day in advance for better flavor. These cookies can also be made in an air fryer at 320°F (160°C) for 8-10 minutes.
