Ingredients

  • 1 cup Lemon Curd
  • 1 cup Granulated Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream butter and sugar together until light and fluffy, about 3–5 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt in another bowl. Gradually add to the wet mixture, stirring just until combined.
  5. Fold in the lemon curd gently into the cookie dough.
  6. Scoop dollops of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, until edges are lightly golden.
  8. Cool slightly, then sprinkle granulated sugar on top and caramelize with a kitchen torch until bubbly and golden.
