- 1 cup Sugar
- 2 large Eggs

- 1 cup Lemon Curd
- 1 cup Granulated Sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Cream butter and sugar together until light and fluffy, about 3–5 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Combine the flour, baking powder, and salt in another bowl. Gradually add to the wet mixture, stirring just until combined.
- Fold in the lemon curd gently into the cookie dough.
- Scoop dollops of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until edges are lightly golden.
- Cool slightly, then sprinkle granulated sugar on top and caramelize with a kitchen torch until bubbly and golden.
