For the Mousse

  • 1/2 cup heavy whipping cream, cold

  • 2 oz cream cheese, softened

  • 2 tablespoons natural creamy peanut butter

  • 1–2 tablespoons powdered monk fruit sweetener with erythritol, or to taste

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

Optional Topping

– 1 tablespoon sugar-free chocolate chips


Instructions

This no-bake dessert comes together in a few simple steps. The most important techniques are softening the cream cheese, whipping the cream properly, and folding the mixtures together gently.

Step 1: Soften the Cream Cheese

Remove the cream cheese from the refrigerator and allow it to soften at room temperature briefly.

Softened cream cheese blends more easily with the peanut butter and cocoa powder.

If the cream cheese is too cold, it may leave small lumps in the finished mousse.

The cream cheese should feel soft enough to mix smoothly but shouldn’t be warm or melted.

Step 2: Combine the Chocolate Peanut Butter Ingredients

Place the softened cream cheese in a medium mixing bowl.

Add the natural creamy peanut butter, unsweetened cocoa powder, powdered monk fruit sweetener, vanilla extract, and a pinch of salt.

Begin with 1 tablespoon of sweetener if you prefer a less sweet dessert.

You can add more after tasting the mixture.

Step 3: Beat Until Smooth and Creamy

Using an electric hand mixer, beat the ingredients together until smooth.

Continue mixing until the cream cheese, peanut butter, cocoa powder, and sweetener are completely incorporated.

The mixture will be fairly thick at this stage.

Scrape down the sides of the bowl with a spatula to ensure everything is evenly combined.

Taste a small amount and adjust the sweetness if necessary.

The chocolate-peanut butter base should be rich, smooth, and slightly thick.

Step 4: Whip the Heavy Cream

Pour the cold heavy whipping cream into a separate clean mixing bowl.

Using an electric mixer, beat the cream until soft peaks form.

Soft peaks mean that when you lift the beaters, the whipped cream forms a peak that gently bends over.

Avoid whipping until the cream becomes stiff or grainy.

Softly whipped cream is easier to fold into the chocolate mixture and produces a lighter mousse.

Step 5: Lighten the Chocolate Peanut Butter Mixture

Add approximately one-third of the whipped cream to the chocolate peanut butter mixture.

Using a spatula, gently stir or fold until the thick base becomes slightly lighter and softer.

This first addition helps loosen the mixture, making it easier to incorporate the remaining whipped cream without deflating it.

Step 6: Fold in the Remaining Whipped Cream

Add the remaining whipped cream.

Using a rubber spatula, gently fold the mixture together.

Move the spatula down through the center, along the bottom of the bowl, and up over the top.

Rotate the bowl as you continue folding.

Avoid vigorous stirring because it can remove the air from the whipped cream.

Continue until the mousse is evenly colored and no large white streaks remain.

The finished mixture should look light, creamy, and fluffy.

Step 7: Transfer to a Dessert Bowl

Spoon the mousse into a small dessert bowl, glass, or ramekin.

Use the back of a spoon to create soft swirls on the surface.

For a more decorative presentation, transfer the mousse to a piping bag fitted with a star tip and pipe it into a serving glass.

The mousse should hold soft peaks while remaining creamy.

Step 8: Add Optional Chocolate Chips

Sprinkle the sugar-free chocolate chips over the top.

The chips add a pleasant crunch that contrasts with the soft mousse.

You can also add a light dusting of cocoa powder or a tiny drizzle of warmed, unsweetened peanut butter if desired.

Step 9: Serve Immediately or Chill

Enjoy the mousse immediately if you prefer a softer, fluffier texture.

For a thicker, more chilled dessert, refrigerate for approximately 20–30 minutes.

Chilling helps the cream cheese and peanut butter mixture firm up slightly.
