Description

Delightful Chicken Ranch Quesadillas filled with succulent chicken, crispy bacon, and creamy ranch dressing, all nestled between toasty flour tortillas.

  • 2 cups cooked chicken breast, shredded
  • 6 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Sour cream (for serving)
  • Chopped green onions (for garnish)

Instructions

  1. Combine the shredded chicken, crumbled bacon, shredded cheddar cheese, and ranch dressing in a mixing bowl. Stir well until everything is evenly coated.
  2. Heat the olive oil in a large skillet over medium heat until it glistens.
  3. Place one tortilla in the skillet; scoop a generous portion of the chicken mixture onto one half of the tortilla. Carefully fold the other half over to create a half-moon shape.
  4. Cook for 2-3 minutes until the bottom is golden brown and crispy, then flip and cook for another 2-3 minutes.
  5. Remove the quesadilla from the skillet and keep it warm while repeating the process with the remaining tortillas.
  6. Slice each quesadilla into wedges and serve warm with sour cream and a sprinkle of chopped green onions.

Notes

Make ahead by assembling the quesadilla filling in advance and refrigerating. Customize by switching cheese or adding veggies.
