Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- Cook quinoa in a medium-sized pot with water or broth, simmering for about 15 minutes.
- Fluff the quinoa gently with a fork after letting it sit for 5 minutes.
- Combine the cooled quinoa with cherry tomatoes, cucumber, bell pepper, red onion, and parsley in a large bowl.
- Whisk together olive oil, lemon juice, and salt and pepper in a smaller bowl for the dressing.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Serve chilled or at room temperature.
Notes
You can customize the salad by adding diced avocado or substituting parsley with cilantro.
