    • 1 cup corn kernels
    • 2 tbsp tomato paste
    • ⅓ cup water
  • For the Seasoning:
    • 2 tsp chili powder
    • 1½ tsp ground cumin
    • 1 tsp smoked paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • ½ tsp dried Mexican oregano
    • ½ tsp kosher salt
    • ¼ tsp freshly ground black pepper
  • For the Casserole:
    • 1 (16 oz) can refried beans
    • 8 oz sturdy tortilla chips, lightly crushed
    • ½ cup salsa
    • ½ cup sour cream
    • 1½ cups shredded sharp cheddar cheese
    • 1½ cups shredded Monterey Jack cheese
    • 1 cup shredded Mexican cheese blend
  • For the Loaded Toppings:
    • Diced Roma tomatoes
    • Sliced jalapeños
    • Sliced green onions
    • Chopped fresh cilantro
    • Diced avocado
    • Sour cream
    • Salsa
    • Crumbled queso fresco

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until softened, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the ground beef, breaking it apart with a spatula, and cook until browned, about 7-10 minutes.
  5. Drain excess fat, then add the drained Rotel tomatoes, black beans, corn, tomato paste, and water. Mix well.
  6. In a small bowl, combine the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Sprinkle the seasoning over the beef mixture and stir to combine. Simmer for 5 minutes.
  7. In a large baking dish, spread the refried beans evenly on the bottom. Layer the crushed tortilla chips over the beans.
  8. Pour the beef mixture over the tortilla chips, followed by the salsa and sour cream.
  9. Sprinkle the cheddar, Monterey Jack, and Mexican cheese blend evenly on top.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  11. Remove from the oven and let it cool for 5 minutes before adding your desired toppings.
