Turkey Sausage & Pepper Egg Muffins

  • 1/2 cup plain Greek yogurt
  • 8 oz lean turkey sausage, cooked and crumbled
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup finely diced yellow bell pepper
  • 1/4 cup finely diced yellow onion
  • 2 tbsp chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp chopped fresh parsley, optional

Instructions

Step 1: Preheat the Oven 🔥

Preheat your oven to 375°F.

Lightly grease a standard 12-cup muffin pan.

Alternatively, use silicone muffin liners.

Make sure the cups are adequately greased because baked egg mixtures can stick more readily than traditional muffins.

How to Prevent Egg Muffins from Sticking

One of the most common frustrations with egg muffins is getting them out of the pan cleanly.

For easier removal:

  • Grease the muffin cups thoroughly
  • Use silicone liners when available
  • Allow the muffins to cool for about 5 minutes before removing
  • Run a thin silicone spatula or butter knife carefully around the edges if necessary

Silicone muffin pans or liners are particularly convenient for meal-prep egg muffins because the cooled eggs generally release more easily.

Step 2: Cook the Turkey Sausage 🦃

Place a skillet over medium heat.

Add 8 ounces lean turkey sausage.

Cook for approximately 6–8 minutes, breaking the sausage into small crumbles as it cooks.

Continue cooking until the sausage is fully cooked.

If it releases excess grease or liquid, drain it.

Set the sausage aside and allow it to cool slightly while you prepare the egg mixture.

Why Cook the Sausage First?

The turkey sausage should be completely cooked before it goes into the egg mixture.

The oven time is designed primarily to set the eggs and warm the fillings—not to reliably cook a large quantity of raw sausage inside the muffins.

Pre-cooking also allows you to drain excess moisture or grease that could otherwise affect the egg texture.

Step 3: Whisk the Eggs and Greek Yogurt

Crack 8 large eggs into a large mixing bowl.

Add 1/2 cup plain Greek yogurt.

Whisk thoroughly until the mixture is relatively smooth and uniform.

Small traces of yogurt are fine, but avoid leaving large clumps.

Step 4: Add the Seasonings

Whisk in:

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Mix until evenly distributed.

Seasoning the egg base before adding the fillings helps ensure every muffin has consistent flavor.

Step 5: Add the Turkey Sausage

Once the cooked sausage has cooled slightly, add it to the egg mixture.

Break apart any especially large pieces before adding them.

Small crumbles distribute more evenly and make the muffins easier to eat.

Step 6: Add the Cheese 🧀

Stir in 1/2 cup shredded sharp cheddar cheese.

If you want visibly cheesy tops, reserve a small portion to sprinkle over the filled muffin cups before baking.

Step 7: Add the Vegetables 🌶️

Add:

  • 1/2 cup finely diced red bell pepper
  • 1/4 cup finely diced yellow bell pepper
  • 1/4 cup finely diced yellow onion
  • 2 tablespoons chopped green onions

Fold everything together until the sausage, cheese, and vegetables are evenly distributed.

Why Finely Dice the Vegetables?

These muffins only bake for approximately 18–22 minutes.

Large pieces of raw pepper or onion may remain excessively firm by the time the eggs have set.

A fine dice allows the vegetables to soften more quickly while distributing them throughout the muffins.

It also prevents large pieces from weighing down individual sections of the egg mixture.

Step 8: Fill the Muffin Cups

Divide the egg mixture evenly among the 12 prepared muffin cups.

Fill each cup approximately 3/4 full.

Try to distribute the sausage and vegetables evenly rather than allowing the solid ingredients to settle into only a few cups.

If you’ve reserved some cheddar, sprinkle a small amount over each muffin.

Don’t Overfill the Muffin Pan

Egg muffins puff as they bake.

Leaving some room at the top of each cup reduces the chance of overflow.

The muffins may rise noticeably in the oven and then settle slightly as they cool.

That’s normal for baked egg dishes.

Step 9: Bake

Place the muffin pan in the preheated 375°F oven.

Bake for approximately 18–22 minutes.

The muffins are ready when:

  • The centers are set
  • The tops are lightly golden
  • The eggs no longer look wet
  • The muffins have puffed slightly

Avoid baking them significantly longer than necessary.

Overbaked eggs can become dry and rubbery.

Step 10: Cool for 5 Minutes

Remove the pan from the oven.

Allow the egg muffins to cool in the pan for approximately 5 minutes.

This short resting period helps them firm up and makes removal easier.

Step 11: Remove from the Pan

Carefully loosen the edges if necessary.

Lift the muffins from the pan and transfer them to a plate or cooling rack.

Step 12: Garnish and Serve 🌿

Sprinkle with chopped fresh parsley or additional green onions if desired.
