- 1 cup light brown sugar (packed)
- 1 cup vegetable oil (or melted butter)
- 4 large eggs
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
- Whisk together granulated sugar, light brown sugar, vegetable oil, and eggs in a large mixing bowl until smooth.
- Stir together all-purpose flour, baking powder, and salt in a separate bowl.
- Add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the vanilla extract and chopped pecans until evenly distributed.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Cool completely in the pan on a cooling rack before slicing.
