A delicious and easy-to-make strawberry poke cake that is perfect for any occasion.
Ingredients

- 1 box of white cake mix
- 1 cup of water
- 1/3 cup of vegetable oil
- 3 large eggs
- 1 cup of strawberry gelatin
- 1 cup of boiling water
- 1 cup of fresh strawberries, sliced
- 1 cup of whipped topping
- 1/2 cup of cream cheese, softened
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the white cake mix according to package instructions using water, oil, and eggs.
- Pour the batter into a greased 9×13 inch baking dish and bake for 30-35 minutes.
- Once baked, remove the cake from the oven and let it cool for 10 minutes.
- In a separate bowl, dissolve the strawberry gelatin in boiling water.
- Poke holes in the cooled cake using a fork and pour the gelatin mixture over the cake.
- Refrigerate the cake for at least 2 hours to allow the gelatin to set.
- In another bowl, mix the whipped topping and softened cream cheese until smooth.
- Spread the cream cheese mixture over the set gelatin layer on the cake.
- Top with sliced fresh strawberries and serve.
Notes
- For a richer flavor, use fresh strawberries instead of frozen.
- Make sure the cake is completely cooled before adding the gelatin.
- This cake can be made a day in advance for convenience.
