- 250g pasta (penne or fusilli)
- 300g fresh spinach
- 250g ricotta cheese
- 200g shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
- 1 cup marinara sauce
Instructions
- Preheat your oven to 180°C (350°F).
- Cook the pasta according to package instructions until al dente.
- Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add fresh spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
- Combine the cooked pasta, wilted spinach, ricotta cheese, half of the mozzarella, and marinara sauce in a mixing bowl.
- Transfer the mixture to a baking dish and top with the remaining mozzarella and Parmesan.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Let it sit for a few minutes before serving.
Notes
For make-ahead preparation, assemble the dish a day in advance and refrigerate until ready to cook. Can be customized with various vegetables.
