- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper

- 1/2 cup coconut yogurt
- Juice of 1 lime
- 1 tablespoon honey or agave syrup (optional)
- 2 tablespoons shredded coconut (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Carefully cut the watermelon into thick fries, discarding the rind.
- Combine olive oil, chili powder, cayenne pepper, and a pinch of salt in a large mixing bowl.
- Add the watermelon fries to the bowl, tossing them gently to coat.
- Lay the fries in a single layer on a baking sheet lined with parchment paper.
- Bake for about 20-25 minutes, turning halfway through.
- While the fries are baking, whisk together coconut yogurt, lime juice, and optional honey/agave in a separate bowl.
- Serve the fries hot with the coconut lime dipping sauce and sprinkle with shredded coconut.
