  • 1/2 cup coconut yogurt
  • Juice of 1 lime
  • 1 tablespoon honey or agave syrup (optional)
  • 2 tablespoons shredded coconut (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the watermelon into thick fries, discarding the rind.
  3. Combine olive oil, chili powder, cayenne pepper, and a pinch of salt in a large mixing bowl.
  4. Add the watermelon fries to the bowl, tossing them gently to coat.
  5. Lay the fries in a single layer on a baking sheet lined with parchment paper.
  6. Bake for about 20-25 minutes, turning halfway through.
  7. While the fries are baking, whisk together coconut yogurt, lime juice, and optional honey/agave in a separate bowl.
  8. Serve the fries hot with the coconut lime dipping sauce and sprinkle with shredded coconut.
