Description

A culinary celebration of spicy and sweet, featuring golden-brown chicken in a sticky maple glaze served over creamy coconut rice.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup pure maple syrup
  • 2 tbsp Sriracha sauce
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 3 green onions, sliced (for garnish)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: In a large mixing bowl, whisk together the maple syrup, Sriracha sauce, minced garlic, ginger, soy sauce, salt, and pepper. Add the chicken breasts, ensuring they are fully coated. Cover and let marinate for at least 30 minutes, preferably overnight.
  2. Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot over medium heat, combine the rinsed rice with the coconut milk and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes.
  3. Sear the Chicken: Heat a tablespoon of oil in a skillet over medium-high heat. Remove chicken from marinade and sear for about 6-7 minutes on each side until golden and cooked through.
  4. Add Sauce: Pour the reserved marinade into the skillet and bring it to a simmer. Allow the sauce to thicken on low heat for another 5-7 minutes.
  5. Fluff the Rice: Once the rice has absorbed all the liquid, fluff it gently with a fork.
  6. Garnish and Serve: Plate the chicken atop the coconut rice. Garnish with freshly sliced green onions and lime wedges.

Notes

For extra flavor, squeeze lime over the chicken and rice just before serving. Consider marinating the chicken overnight for deeper flavor.
