  • 1 egg

Instructions

  1. Combine Ingredients: In a large bowl, mix together the ground beef or lamb, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, oregano, salt, pepper, egg, lemon zest, and lemon juice until well combined.
  2. Shape the Meatballs: With your hands, form the mixture into meatballs of your desired size, usually about golf ball size for that perfect mouthful.
  3. Cook the Meatballs: Heat the olive oil in a large skillet over medium heat. Carefully add the meatballs to the skillet, browning them evenly on all sides.
  4. Add Broth: Once browned, pour in the chicken broth, scraping up any flavorful bits stuck to the bottom of the skillet. Bring the broth to a gentle simmer.
  5. Simmer: Cover the skillet and let the meatballs cook in the broth for about 20 minutes, or until they reach an internal temperature of 160°F (70°C).
