- 1 tsp Italian seasoning
- 2 bay leaves

- 4 oz cream cheese, softened
- ½ cup sour cream
- ½ cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp cornstarch
- 2 tbsp cold water

Instructions
- In a large bowl, combine the beef stew meat with olive oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Mix well to coat the beef evenly.
- In the slow cooker, layer the halved Yukon Gold potatoes, diced onion, and minced garlic.
- Place the seasoned beef on top of the vegetables in the slow cooker.
- In a separate bowl, whisk together the beef broth, Worcestershire sauce, Dijon mustard, Italian seasoning, and bay leaves. Pour this mixture over the beef and vegetables.
- Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.
- About 30 minutes before serving, mix the softened cream cheese, sour cream, heavy cream, and grated Parmesan cheese in a bowl until smooth.
