    • 1 tsp dried thyme
  • For the Slow Cooker
    • lbs baby Yukon Gold potatoes, halved
    • 1 small yellow onion, diced
    • 4 cloves garlic, minced
    • 2 cups beef broth
    • 1 tbsp Worcestershire sauce
    • 1 tbsp Dijon mustard
    • 1 tsp Italian seasoning
    • 2 bay leaves
  • For the Creamy Gravy
    • 4 oz cream cheese, softened
    • ½ cup sour cream
    • ½ cup heavy cream
    • 1 cup freshly grated Parmesan cheese
    • 2 tbsp cornstarch
    • 2 tbsp cold water
  • Optional Garnishes
    • Chopped fresh parsley
    • Chopped chives
    • Cracked black pepper
    • Extra Parmesan cheese
    • Buttered dinner rolls

Instructions

  1. In a large bowl, combine the beef stew meat with olive oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Mix well to coat the beef evenly.
  2. In the slow cooker, layer the halved Yukon Gold potatoes, diced onion, and minced garlic.
  3. Place the seasoned beef on top of the vegetables in the slow cooker.
  4. In a separate bowl, whisk together the beef broth, Worcestershire sauce, Dijon mustard, Italian seasoning, and bay leaves. Pour this mixture over the beef and vegetables.
  5. Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.
  6. About 30 minutes before serving, mix the softened cream cheese, sour cream, heavy cream, and grated Parmesan cheese in a bowl until smooth.
  7. In a small bowl, combine cornstarch and cold water to create a slurry. Stir this into the creamy mixture.
  8. Remove the bay leaves from the slow cooker and stir in the creamy mixture. Cook on high for an additional 30 minutes, until the gravy is thickened and creamy.
