- 1 lb shrimp, peeled and deveined
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- For the chipotle sauce: 1/2 cup Greek yogurt, 2 tablespoons chipotle in adobo sauce, 1 tablespoon lime juice, salt to taste
Instructions
- In a bowl, mix the shrimp with lime juice, salt, and pepper. Set aside to marinate for 10 minutes.
- In a skillet over medium heat, cook the shrimp for 2-3 minutes on each side until pink and cooked through.
- In a large bowl, combine the cooked rice, black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
- In a separate bowl, whisk together the ingredients for the chipotle sauce until smooth.
- To assemble the burrito bowl, layer the rice mixture in a bowl, top with cooked shrimp, and drizzle with chipotle sauce.
- Garnish with additional cilantro and lime wedges if desired.
