    • 2 tbsp chicken broth
    • 1 tbsp Worcestershire sauce
    • 1 tsp soy sauce
    • 2 tbsp chopped fresh parsley

    • 1 cup sliced mushrooms
    • 1 zucchini, diced
    • 1 cup baby spinach
    • ½ cup shredded mozzarella
    • ¼ cup grated Parmesan cheese
    • Cooked rice or cauliflower rice for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.
  3. Increase the heat to medium-high and add the ground chicken, breaking it apart with a spatula. Cook for 5-7 minutes until browned and cooked through.
  4. Stir in the kosher salt, black pepper, smoked paprika, Italian seasoning, onion powder, garlic powder, and crushed red pepper flakes (if using). Cook for an additional 2 minutes to allow the spices to bloom.
  5. Add the sliced bell peppers, tomato paste, chicken broth, Worcestershire sauce, and soy sauce. Stir well to combine.
  6. Cover the skillet and let it cook for 8-10 minutes, stirring occasionally, until the peppers are tender but still vibrant.
  7. Remove from heat and stir in the chopped parsley. If using, add the optional cheese and let it melt slightly before serving.
  8. Serve hot over cooked rice or cauliflower rice.
