Description

This Rolled Chicken with Feta & Spinach features tender chicken wrapped around a creamy feta and spinach filling, creating a delightful contrast of flavors and textures.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup feta cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together crumbled feta cheese, chopped spinach, and sun-dried tomatoes in a medium bowl.
  3. Place a chicken breast between two pieces of plastic wrap and pound until it’s about 1/2 inch thick.
  4. Spread the feta mixture evenly over the pounded chicken.
  5. Roll the chicken tightly and secure with toothpicks or kitchen twine.
  6. Season the outside of the chicken rolls with garlic powder, onion powder, salt, and pepper.
  7. Heat the olive oil in a skillet over medium-high heat and sear the chicken rolls for 2-3 minutes on each side.
  8. Transfer the chicken rolls to a baking dish and bake for 20-25 minutes until fully cooked.
  9. Remove</strong toothpicks or twine before slicing and serving.

Notes

Make the chicken rolls a day in advance and refrigerate to enhance flavors. You can also grill the chicken instead of baking it for a smoky flavor.
