- 4 boneless, skinless chicken breasts
- 1 cup feta cheese, crumbled
- 2 cups fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Toothpicks or kitchen twine
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together crumbled feta cheese, chopped spinach, and sun-dried tomatoes in a medium bowl.
- Place a chicken breast between two pieces of plastic wrap and pound until it’s about 1/2 inch thick.
- Spread the feta mixture evenly over the pounded chicken.
- Roll the chicken tightly and secure with toothpicks or kitchen twine.
- Season the outside of the chicken rolls with garlic powder, onion powder, salt, and pepper.
- Heat the olive oil in a skillet over medium-high heat and sear the chicken rolls for 2-3 minutes on each side.
- Transfer the chicken rolls to a baking dish and bake for 20-25 minutes until fully cooked.
- Remove</strong toothpicks or twine before slicing and serving.
Notes
Make the chicken rolls a day in advance and refrigerate to enhance flavors. You can also grill the chicken instead of baking it for a smoky flavor.
