Ingredients

  • 2 cups of mixed vegetables (bell peppers, zucchini, carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon water (to thin the sauce)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the mixed vegetables into bite-sized pieces.
  3. In a bowl, toss the vegetables with olive oil, garlic powder, salt, and pepper.
  4. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  5. While the vegetables are roasting, prepare the tahini sauce by whisking together tahini, lemon juice, and water until smooth.
  6. Once the vegetables are done, remove them from the oven and let them cool slightly.
  7. Assemble the bowl by placing the roasted veggies in a serving dish and drizzling with tahini sauce.
  8. Garnish with fresh parsley before serving.
