Ingredients

- 2 cups of mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon water (to thin the sauce)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the mixed vegetables into bite-sized pieces.
- In a bowl, toss the vegetables with olive oil, garlic powder, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, prepare the tahini sauce by whisking together tahini, lemon juice, and water until smooth.
- Once the vegetables are done, remove them from the oven and let them cool slightly.
- Assemble the bowl by placing the roasted veggies in a serving dish and drizzling with tahini sauce.
- Garnish with fresh parsley before serving.
