A delightful and tangy rhubarb sauce combined with sweet strawberry Jello, perfect for topping desserts or enjoying on its own.

- 2 cups rhubarb, chopped
- 1 cup sugar
- 2 cups water
- 1 package strawberry Jello (3 oz)
- 1 cup strawberries, sliced (optional)
Instructions
- Combine chopped rhubarb, sugar, and water in a medium saucepan. Bring to a gentle boil over medium heat, stirring occasionally.
- Reduce the heat to low and let it simmer for about 10-15 minutes, or until the rhubarb becomes soft.
- Remove the saucepan from heat and stir in the strawberry Jello until completely dissolved.
- Fold in sliced strawberries, if desired.
- Allow the sauce to cool at room temperature before transferring to the refrigerator to chill until set, around 2-4 hours.
- Serve chilled as a topping or on its own.
Notes
This sauce can be made ahead of time and stored in the refrigerator for up to a week.
