- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/8 teaspoon salt
- 3 eggs
- 1 teaspoon vanilla extract
- 1 pre-made pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the pie crust in a 9×9 inch baking dish and trim excess.
- Combine the sugar, flour, and salt in a mixing bowl.
- Mix the eggs and vanilla in another bowl, then add dry ingredients.
- Add the chopped rhubarb to the custard mixture.
- Pour the custard over the pie crust and bake for 35-40 minutes.
- Cool completely before slicing into squares.
