Description

Ingredients

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/8 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 pre-made pie crust

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust in a 9×9 inch baking dish and trim excess.
  3. Combine the sugar, flour, and salt in a mixing bowl.
  4. Mix the eggs and vanilla in another bowl, then add dry ingredients.
  5. Add the chopped rhubarb to the custard mixture.
  6. Pour the custard over the pie crust and bake for 35-40 minutes.
  7. Cool completely before slicing into squares.
