- 1 cup rhubarb, diced

- 1/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Mix together the flour, sugar, baking powder, and salt in a bowl until well combined.
- Add the softened butter and milk to the mixture, stirring until a soft dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Spread the diced rhubarb, cinnamon, brown sugar, and vanilla evenly over the dough.
- Roll the dough tightly into a log from the long edge.
- Cut the log into 1-inch thick slices using a sharp knife.
- Place the slices in the greased baking dish, leaving space between them.
- Bake for 20-25 minutes or until golden brown.
