  • 1 cup rhubarb, diced
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Mix together the flour, sugar, baking powder, and salt in a bowl until well combined.
  3. Add the softened butter and milk to the mixture, stirring until a soft dough forms.
  4. Roll out the dough on a floured surface to about 1/4 inch thick.
  5. Spread the diced rhubarb, cinnamon, brown sugar, and vanilla evenly over the dough.
  6. Roll the dough tightly into a log from the long edge.
  7. Cut the log into 1-inch thick slices using a sharp knife.
  8. Place the slices in the greased baking dish, leaving space between them.
  9. Bake for 20-25 minutes or until golden brown.
