- 2 cups red velvet cake mix
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh strawberries, sliced
- 1/4 cup powdered sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9-inch springform pan.
- In a large mixing bowl, combine the red velvet cake mix, melted butter, and eggs. Stir until well blended and smooth.
- Pour the batter into the prepared springform pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow it to cool completely in the pan on a wire rack.
- In another bowl, beat your softened cream cheese until creamy and smooth. Gradually add the sugar and vanilla extract, mixing until thoroughly combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture.
- Once the cake has cooled, spread the cream cheese mixture over the top.
- Top with freshly sliced strawberries and sprinkle with powdered sugar.
- Chill your cheesecake in the refrigerator for at least 2 hours before serving.

This cheesecake can be stored in the fridge for up to three days or frozen for up to a month. Allow to thaw overnight before serving.
