Ingredients

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh strawberries, sliced
  • 1/4 cup powdered sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9-inch springform pan.
  2. In a large mixing bowl, combine the red velvet cake mix, melted butter, and eggs. Stir until well blended and smooth.
  3. Pour the batter into the prepared springform pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow it to cool completely in the pan on a wire rack.
  5. In another bowl, beat your softened cream cheese until creamy and smooth. Gradually add the sugar and vanilla extract, mixing until thoroughly combined.
  6. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture.
  7. Once the cake has cooled, spread the cream cheese mixture over the top.
  8. Top with freshly sliced strawberries and sprinkle with powdered sugar.
  9. Chill your cheesecake in the refrigerator for at least 2 hours before serving.
