  • 3 cups old-fashioned oats
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar using your mixer until light and fluffy.
  3. Beat in the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract.
  4. Mix together the flour, baking soda, salt, and ground cinnamon in another bowl.
  5. Add the dry ingredients gradually to the wet mixture, mixing until just combined.
  6. Stir in the oats, chopped pecans, and corn syrup until well combined.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about two inches apart.
  8. Bake for 10–12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
