- 1 1/2 cups fresh peaches (diced)
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour (for streusel)
- 1/4 cup rolled oats
- 1/4 cup unsalted butter (softened, for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Combine the melted butter, milk, eggs, and vanilla in another bowl.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the diced peaches gently.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Mix together the brown sugar, 1/4 cup of flour, oats, and softened butter in a small bowl until crumbly; sprinkle over the muffins.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before serving.
