  • 1 1/2 cups fresh peaches (diced)
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup rolled oats
  • 1/4 cup unsalted butter (softened, for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Combine the melted butter, milk, eggs, and vanilla in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the diced peaches gently.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Mix together the brown sugar, 1/4 cup of flour, oats, and softened butter in a small bowl until crumbly; sprinkle over the muffins.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.
