Description

Delicious and moist muffins made with ripe bananas, creamy peanut butter, and rich chocolate chips, perfect for breakfast or snacks.


Ingredients

  • 2 ripe bananas
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas in a large bowl using a fork.
  3. Add peanut butter, sugar, vanilla extract, and the egg to the mashed bananas, then beat until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the chocolate chips without breaking them.
  7. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool in the tin for a few minutes before transferring to a wire rack.

Notes

Use well-ripened bananas for maximum sweetness. Muffins can be made ahead and stored in the fridge overnight for an easy bake in the morning.
