- 2 ripe bananas
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the bananas in a large bowl using a fork.
- Add peanut butter, sugar, vanilla extract, and the egg to the mashed bananas, then beat until smooth.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chocolate chips without breaking them.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool in the tin for a few minutes before transferring to a wire rack.
Notes
Use well-ripened bananas for maximum sweetness. Muffins can be made ahead and stored in the fridge overnight for an easy bake in the morning.
