- 1 cup orzo pasta
- 1 can artichoke hearts, drained and chopped
- 1 lemon, zested and juiced

Instructions
- Cook the orzo: Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions. Once tender, drain and set aside.
- Heat olive oil: In a large skillet, heat the olive oil over medium heat.
- Sauté garlic: Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to brown it.
- Add artichokes and lemon: Stir in the chopped artichokes, lemon zest, and lemon juice. Cook for an additional 2-3 minutes.
- Combine with orzo: Gently fold the cooked orzo into the skillet and season with salt and pepper to taste.
- Serve: Serve warm, garnished with fresh parsley.
