Description

Oreo Cheesecake Cookie Bombs are a delightful fusion of creamy cheesecake and crunchy Oreo cookies, encased in a soft cookie shell. Each bite offers a rich, velvety texture complemented by the satisfying crunch of chocolate cookie crumbs, creating a heavenly dessert experience.

Ingredients

Scale
  • For the Cheesecake Filling:
    • 8 oz cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 tsp vanilla extract
    • 1/2 cup crushed Oreo cookies
  • For the Cookie Dough:
    • 1 cup unsalted butter, softened
    • 1 cup brown sugar
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 2 tsp vanilla extract
    • 3 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and crushed Oreos until smooth. Chill in the refrigerator for 30 minutes.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture, mixing until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Take a tablespoon of cookie dough, flatten it in your palm, and place a teaspoon of the cheesecake filling in the center. Wrap the dough around the filling and roll into a ball.
  8. Place the cookie bombs on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the edges are golden brown.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
