- 1 box of yellow cake mix
- 1 cup of peach puree
- 1/2 cup of champagne
- 1/2 cup of vegetable oil
- 3 large eggs
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- Powdered sugar for dusting
- Peach slices for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Combine the yellow cake mix, peach puree, champagne, vegetable oil, eggs, vanilla extract, and salt in a large mixing bowl.
- Mix until the batter is smooth and well combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar and top with peach slices if desired.
