Description

Delightful mini cheesecakes topped with caramelized pineapple, encased in a graham cracker crust—perfect for any occasion.


Ingredients

  • 1 cup crushed pineapple, drained
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup graham cracker crumbs
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Melt the butter and brown sugar together over medium heat in a small saucepan.
  3. Add the drained crushed pineapple and cook for 5 minutes until caramelized slightly.
  4. Beat together the softened cream cheese, sugar, and vanilla extract in a mixing bowl until smooth.
  5. Add the egg and mix until just combined.
  6. Combine the graham cracker crumbs and cinnamon in a separate bowl.
  7. Press the crumb mixture into the bottom of mini cheesecake pans.
  8. Fill each cup nearly to the top with the cream cheese mixture.
  9. Add a spoonful of the pineapple mixture on top.
  10. Bake for 20-25 minutes until set but slightly jiggly.
  11. Cool completely before serving.

Notes

These cheesecakes can be prepared a day in advance. Add shredded coconut for a tropical twist!
