  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 2 tablespoons fresh orange juice
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon orange extract
  • Orange slices for garnish

Instructions

  1. Preheat the oven to 325°F (165°C) and lightly grease a muffin tin or mini cheesecake molds.
  2. Mix the graham cracker crumbs, melted butter, and brown sugar until the mixture resembles wet sand.
  3. Press the crumb mixture into the bottom of each mold to create a solid crust layer.
  4. Bake the crusts in the preheated oven for 8 minutes. Let them cool completely afterward.
  5. Beat the softened cream cheese in a large mixing bowl until smooth and creamy.
  6. Add granulated sugar, vanilla extract, orange zest, and fresh orange juice to the cream cheese, mixing until combined.
  7. Whip the heavy cream in a separate bowl until soft peaks form.
  8. Gradually add powdered sugar and orange extract, continuing to whip until fluffy.
  9. Fold half of the whipped cream into the cheesecake mixture gently.
  10. Spoon or pipe the cheesecake filling over the cooled crusts, creating a delightful swirl on top.
  11. Refrigerate the mini cheesecakes for at least 4 hours until set and chilled.
  12. Pipe the remaining whipped cream atop each mini cheesecake before serving.
  13. Garnish with fresh orange slices.
