- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 1 pound chicken thighs, diced
- 1 pound shrimp, peeled and deveined
- 6 cups chicken broth
- 2 cups okra, sliced
- 2 tablespoons Cajun seasoning
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Whisk in the flour to make a roux, cooking until it turns a dark brown color.
- Add the onion, bell pepper, celery, and garlic, cooking until softened.
- Stir in the sausage and chicken, cooking until browned.
- Add the chicken broth, okra, Cajun seasoning, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the shrimp and cook for an additional 5 minutes.
- Remove bay leaves and serve over cooked rice.
Notes
- For a spicier gumbo, add more Cajun seasoning or hot sauce.
- Feel free to substitute the proteins with your favorites, such as crab or fish.
- Gumbo can be made a day in advance for better flavor.
