  • 1 pound smoked sausage, sliced
  • 1 pound chicken thighs, diced
  • 1 pound shrimp, peeled and deveined
  • 6 cups chicken broth
  • 2 cups okra, sliced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Whisk in the flour to make a roux, cooking until it turns a dark brown color.
  3. Add the onion, bell pepper, celery, and garlic, cooking until softened.
  4. Stir in the sausage and chicken, cooking until browned.
  5. Add the chicken broth, okra, Cajun seasoning, thyme, bay leaves, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add the shrimp and cook for an additional 5 minutes.
  8. Remove bay leaves and serve over cooked rice.

  • For a spicier gumbo, add more Cajun seasoning or hot sauce.
