Ingredients

  • 2 fillets of white fish (such as cod or tilapia)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup steamed broccoli
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup tahini
  • 2 tablespoons water
  • 1 tablespoon maple syrup (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper.
  3. Place the fish fillets on a baking sheet and brush the lemon garlic mixture over them.
  4. Bake the fish for 12-15 minutes or until cooked through and flaky.
  5. While the fish is baking, prepare the tahini sauce by whisking together tahini, water, and maple syrup in a bowl until smooth.
  6. In serving bowls, layer cooked quinoa, steamed broccoli, and cherry tomatoes.
  7. Top with the baked fish and drizzle with tahini sauce.
  8. Garnish with fresh parsley before serving.
