Ingredients

- 4 cups shredded cabbage
- 1 cup corn kernels
- 1–2 jalapeños, finely chopped
- 1/2 cup chopped cilantro
- 1/4 cup red onion, thinly sliced
- 1/4 cup lime juice
- 2 tablespoons honey or agave syrup
- Salt and pepper to taste
Instructions
- Combine the shredded cabbage, corn kernels, finely chopped jalapeños, fresh cilantro, and red onion in a large bowl until well mixed.
- Make the dressing by whisking together lime juice, honey (or agave syrup), and a sprinkle of salt and pepper in a small bowl.
- Dress the slaw mixture by pouring the dressing over and tossing gently with tongs.
- Let the slaw sit for at least 10 minutes before serving chilled.
Notes
For best results, dress only the portion you plan to serve immediately to maintain crispness. The slaw can be prepared a couple of days in advance; just keep the dressing separate until ready to serve.
