- 2 Chipotle Peppers in Adobo Sauce, minced
- 2 tbsp Olive Oil
- Juice of 1 Lime
- 3 cloves Garlic (minced)
- Salt and Pepper, to taste
Instructions
- Whisk the marinade: In a mixing bowl, combine honey, chipotle peppers, olive oil, lime juice, garlic, salt, and pepper. Whisk until well mixed.
- Marinate the chicken: Place chicken thighs into a resealable plastic bag. Pour marinade over them, seal, and refrigerate for at least 30 minutes or overnight for maximum flavor.
- Preheat the grill: Heat your grill to medium-high.
- Grill the chicken: Cook the marinated thighs for about 5 minutes on each side until juices run clear and internal temperature reaches 165°F.
- Rest and serve: Remove from the grill and let rest for a few minutes before serving.
