- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups old-fashioned oats
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, salt, and cinnamon in a bowl.
- Cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs and vanilla extract until smooth.
- Mix in the dry ingredients and then stir in the oats.
- Drop spoonfuls of dough onto a lined baking sheet, spacing apart.
- Bake for 10–12 minutes or until lightly golden.
- Let the cookies cool completely before moving them.
- Mix the marshmallow fluff and powdered sugar for the filling.
- Spread the filling on the underside of one cookie and sandwich with another.

Make ahead: Cookies can be frozen after baking. Thaw before assembling the filling.
