Description

Delightful sandwich cookies made of oatmeal with a creamy marshmallow filling, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, salt, and cinnamon in a bowl.
  3. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs and vanilla extract until smooth.
  5. Mix in the dry ingredients and then stir in the oats.
  6. Drop spoonfuls of dough onto a lined baking sheet, spacing apart.
  7. Bake for 10–12 minutes or until lightly golden.
  8. Let the cookies cool completely before moving them.
  9. Mix the marshmallow fluff and powdered sugar for the filling.
  10. Spread the filling on the underside of one cookie and sandwich with another.

Notes

Make ahead: Cookies can be frozen after baking. Thaw before assembling the filling.
