Preparation: 10 minutes
Chill: 30–60 minutes
Total: 40–70 minutes
Cooking: None

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • ½ cup thick plain nonfat Greek yogurt
  • 1 labeled serving vanilla protein powder
  • 1–2 tablespoons dry sugar-free instant cheesecake pudding mix
  • ½ cup fresh strawberries, hulled, dried, and chopped
  • ½ teaspoon vanilla
  • 1–2 teaspoons powdered sugar-equivalent sweetener, optional

Instructions

  • Blend cottage cheese and yogurt completely smooth, scraping as needed.
  • Blend in protein powder, 1 tablespoon pudding mix, and vanilla. Rest 2–3 minutes.
  • Check thickness and sweetness. Add more pudding mix gradually if needed, or loosen with teaspoons of milk. Sweeten only after tasting.
  • Transfer to a bowl and gently fold in optional whipped topping.
  • Fold in most strawberries, reserving a few. Alternatively, keep fruit separate until serving.
  • Divide into two cups, cover, and refrigerate for 30–60 minutes.
  • Top with reserved berries and optional crumbs immediately before serving.
