Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • ¾ cup plain nonfat Greek yogurt
  • 1 labeled serving vanilla protein powder suitable for no-cook use
  • Powdered sweetener to taste, up to 1–2 tablespoons for an appropriate sugar-equivalent product
  • 1 teaspoon vanilla
  • ¼ teaspoon butter extract, optional
  • 2 tablespoons mini chocolate chips, divided
  • Unsweetened almond milk as needed, up to 1–3 tablespoons
  • Small pinch salt, only if needed

Instructions

  1. Blend cottage cheese until smooth, using a spoonful of the measured yogurt if needed for circulation.
  2. Add remaining yogurt, protein powder, vanilla, optional butter extract, and optional suitable almond flour. Blend until uniform.
  3. Rest a few minutes to hydrate. Taste and sweeten gradually.
  4. Add milk by teaspoons only if needed for a thick, spoonable consistency. Add salt only after tasting.
  5. Transfer to a bowl and fold in most chips.
  6. Divide into four covered cups and refrigerate at least 30 minutes.
  7. Finish with reserved chips and serve chilled.

Storage: Refrigerate covered for up to 3 days. Freezing is not recommended for the intended texture.
