Instructions
- Sauté the aromatics: In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion turns translucent.
- Cook the veggies: Add the chopped carrots and celery to the pot. Stir occasionally for about 3-4 minutes.
- Brown the chicken: Stir in the diced chicken and cook until it’s browned on all sides.
- Add the broth: Pour in the chicken broth, bringing the mixture to a gentle boil.
