Ingredients

- 2 large flour tortillas
- 1 cup shredded cheese (cheddar and mozzarella blend)
- 1 cup cooked rice
- 1/2 cup refried beans
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Cooking spray or butter for frying
Instructions
- Combine cooked rice, refried beans, shredded cheese, garlic powder, onion powder, salt, and pepper in a bowl until evenly blended.
- Lay one tortilla flat and spoon the mixture into the center without overfilling.
- Fold the sides of the tortilla over the filling, then roll it tightly from the bottom up. Repeat with the second tortilla.
- Heat a skillet over medium heat and coat with cooking spray or melt butter.
- Place the burritos seam side down in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
- Remove the burritos from the skillet and let them cool slightly before slicing in half. Serve warm.
Notes
For a spicy twist, add jalapeños or hot sauce. These burritos can be prepared ahead of time and stored in the fridge.
