Description

A cheesy and hearty fusion of grilled cheese sandwich and burrito, bursting with flavors and textures.


Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (cheddar and mozzarella blend)
  • 1 cup cooked rice
  • 1/2 cup refried beans
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Cooking spray or butter for frying

Instructions

  1. Combine cooked rice, refried beans, shredded cheese, garlic powder, onion powder, salt, and pepper in a bowl until evenly blended.
  2. Lay one tortilla flat and spoon the mixture into the center without overfilling.
  3. Fold the sides of the tortilla over the filling, then roll it tightly from the bottom up. Repeat with the second tortilla.
  4. Heat a skillet over medium heat and coat with cooking spray or melt butter.
  5. Place the burritos seam side down in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
  6. Remove the burritos from the skillet and let them cool slightly before slicing in half. Serve warm.

Notes

For a spicy twist, add jalapeños or hot sauce. These burritos can be prepared ahead of time and stored in the fridge.
