Ingredients

Scale
  • For the Beef Filling
    • 1 lb lean ground beef
    • 1 tbsp olive oil
    • 1 small yellow onion, finely diced
    • 2 cloves garlic, minced
    • 1 tbsp Worcestershire sauce
    • 1 tbsp ketchup
    • 1 tsp yellow mustard
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • ½ tsp smoked paprika
    • 1 tsp kosher salt
    • ½ tsp freshly ground black pepper
    • 1½ cups shredded sharp cheddar cheese
    • ½ cup shredded mozzarella cheese
  • For the Rollups
    • 1 (13.8 oz) refrigerated pizza dough
    • 1 tbsp all-purpose flour (for dusting)
  • Garlic Butter Topping
    • 6 tbsp unsalted butter, melted
    • 3 cloves garlic, finely minced
    • 2 tbsp grated Parmesan cheese
    • 1 tbsp chopped fresh parsley
    • ½ tsp Italian seasoning
    • Pinch of kosher salt
  • Optional Toppings & Dipping Sauces
    • Dill pickle slices
    • Chopped green onions
    • Sesame seeds
    • Burger sauce
    • Ranch dressing
    • Garlic aioli
    • Spicy ketchup
    • Honey mustard
    • Barbecue sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  5. Mix in Worcestershire sauce, ketchup, mustard, onion powder, garlic powder, smoked paprika, salt, and pepper. Cook for another 2 minutes, then remove from heat.
  6. Fold in the shredded cheddar and mozzarella cheese until melted and combined.
  7. On a lightly floured surface, roll out the pizza dough into a rectangle. Cut into equal-sized squares (about 4×4 inches).
  8. Place a generous spoonful of the beef filling in the center of each square, then fold the corners over to seal the filling inside.
  9. Arrange the rollups on a baking sheet lined with parchment paper.
  10. In a small bowl, mix the melted butter, minced garlic, Parmesan cheese, parsley, Italian seasoning, and salt. Brush this garlic butter mixture over each rollup.
  11. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.
  12. Remove from the oven and let cool slightly before serving.

Notes

  • Make-ahead: You can prepare the beef filling a day in advance and store it in the refrigerator. Assemble the rollups just before baking.
  • Storage: Store leftover rollups in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
  • Substitutions: Use ground turkey or chicken for a lighter option. For a vegetarian version, substitute the beef with sautéed mushrooms and spinach.
