  • 2 tsp Italian seasoning

  • 1.5 tbsp olive oil + 2 tbsp olive oil
  • 8 oz mushrooms, thickly sliced into 1/4-inch pieces
  • 4 garlic cloves, minced
  • 1.5 cups almond milk
  • 2 tbsp gluten-free flour
  • 8 oz spinach, stems removed
  • 3/4 cup Parmesan, freshly grated
  • 1/4 tsp crushed red pepper flakes

Instructions

  1. Season your chicken cutlets with Italian seasoning, kosher salt, and freshly ground black pepper. Let them rest for 5-10 minutes.
  2. Heat 1.5 tablespoons of olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Whisk together almond milk and gluten-free flour until smooth in a mixing bowl. Pour into the skillet, stirring continuously until thickened, about 3-5 minutes.
  5. Add the fresh spinach and grated Parmesan, stirring until melted.
  6. Heat the remaining 2 tablespoons of olive oil in a separate skillet over medium-high heat. Add the seasoned chicken, cooking for about 4-5 minutes per side until golden and cooked through.
  7. Combine the cooked chicken with the creamy mushroom and spinach sauce, ensuring everything is heated through.

Notes

You can prep the chicken and sauce ahead of time; just combine them when you’re ready to serve. This dish can be cooked in an air fryer for extra crispiness.
