- 1.5 tbsp olive oil + 2 tbsp olive oil
- 8 oz mushrooms, thickly sliced into 1/4-inch pieces
- 4 garlic cloves, minced
- 1.5 cups almond milk
- 2 tbsp gluten-free flour
- 8 oz spinach, stems removed
- 3/4 cup Parmesan, freshly grated
- 1/4 tsp crushed red pepper flakes
Instructions
- Season your chicken cutlets with Italian seasoning, kosher salt, and freshly ground black pepper. Let them rest for 5-10 minutes.
- Heat 1.5 tablespoons of olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Whisk together almond milk and gluten-free flour until smooth in a mixing bowl. Pour into the skillet, stirring continuously until thickened, about 3-5 minutes.
- Add the fresh spinach and grated Parmesan, stirring until melted.
- Heat the remaining 2 tablespoons of olive oil in a separate skillet over medium-high heat. Add the seasoned chicken, cooking for about 4-5 minutes per side until golden and cooked through.
- Combine the cooked chicken with the creamy mushroom and spinach sauce, ensuring everything is heated through.
Notes
You can prep the chicken and sauce ahead of time; just combine them when you’re ready to serve. This dish can be cooked in an air fryer for extra crispiness.
