- 2 pounds potatoes (red or Yukon gold)
- 4 slices bacon
- 1 large onion, chopped
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon sugar
- Salt and pepper to taste
- Chopped fresh parsley (optional)
Instructions
- Prepare the potatoes by boiling them in salted water until tender, about 15-20 minutes. Allow them to cool slightly.
- Cook the bacon in a skillet over medium heat until crispy, approximately 5-7 minutes. Remove and crumble.
- Caramelize the chopped onion in the same skillet on low heat until golden brown, about 10 minutes.
- Mix the dressing in a bowl by whisking together apple cider vinegar, olive oil, sugar, salt, and pepper.
- Combine the chopped potatoes, caramelized onions, crumbled bacon, and dressing in a large bowl.
- Toss the ingredients gently until coated and adjust seasoning as needed. Serve warm or at room temperature.
Notes
For best flavor, prepare a day ahead and store in the refrigerator. Can also substitute apple cider vinegar with white wine vinegar or lemon juice.
