Description

A warm, creamy corn dip that combines sour cream, mayonnaise, and cheddar cheese, perfect for gathering around the crockpot with tortilla chips.


Ingredients

  • 1 can of corn, drained
  • 1 can of cream corn
  • 1 cup of sour cream
  • 1 cup of mayonnaise
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of diced green onions
  • 1 can of diced jalapeños (optional)
  • Salt and pepper to taste

Instructions

  1. In your crockpot, combine the drained corn, cream corn, sour cream, mayonnaise, shredded cheddar cheese, diced green onions, and diced jalapeños if desired.
  2. Gently stir the mixture until all the ingredients meld together.
  3. Cover the crockpot with the lid and set it to cook on low for about 60-120 minutes, stirring occasionally.
  4. Once everything is warmed through and bubbly, serve hot with crispy tortilla chips or fresh veggies.

Notes

Prep the dip a day in advance and refrigerate. If you don’t have a crockpot, bake it at 350°F (175°C) for 20-30 minutes.
