Instructions
- Prepare the coating: In a mixing bowl, whisk together the flour, garlic powder, paprika, salt, and pepper until well combined.
- Marinate the chicken: Dip each chicken thigh into the buttermilk, generously coating it.
- Coat the chicken: Roll the chicken in the seasoned flour mixture, pressing gently to adhere.
- Heat the oil: In a heavy-bottomed skillet, pour enough oil to cover the bottom and heat over medium heat until shimmering.
- Cook the chicken: Add the coated chicken thighs and jalapeño slices in batches, frying for about 6-8 minutes on each side until golden brown and crispy.
- Serve and enjoy: Remove the chicken and let it rest on a paper towel-lined plate before serving.
