  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 package crushed graham crackers (for crust)
  • 1/4 cup melted butter (for crust)
  • 2 tablespoons sugar (for caramelized topping)
  • 1 tablespoon water (for caramelized topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine crushed graham crackers with melted butter until evenly mixed. Press this mixture firmly into the bottom of the cupcake liners in a muffin tin.
  3. Beat the cream cheese and sugar together until smooth and fluffy.
  4. Add the sour cream and vanilla extract, mixing until completely combined.
  5. Incorporate the eggs one at a time, mixing thoroughly after each addition.
  6. Pour the cheesecake mixture over the crusts, leaving a little space at the top.
  7. Bake for 18-20 minutes or until the centers are set with a slight jiggle.
  8. Cool the cupcakes completely before transferring to the fridge.
  9. Mix sugar and water in a small saucepan over medium heat until the sugar dissolves, then let it bubble and turn golden brown.
  10. Pour the caramel over the cooled cupcakes and let the topping cool and harden before serving.
