Ingredients
Scale
- 2 Chicken Breasts, cut into bite-sized pieces
- 2 tbsp Jerk Seasoning
- 1 Red Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 1 Green Bell Pepper, sliced
- 8 oz Penne or Fettuccine Pasta
- 1 cup Heavy Cream
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- 1 Onion, finely chopped
- Salt and Pepper, to taste
- Parmesan Cheese, for optional garnish
- Fresh Parsley, for garnish
Instructions
- Cook your pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente. Once done, drain and set aside, reserving a little pasta water for later if needed.
- Sauté aromatics: In a large skillet, heat several tablespoons of olive oil over medium heat. Add finely chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Brown the chicken: Incorporate bite-sized pieces of chicken breast into the skillet. Season generously with jerk seasoning. Cook, stirring occasionally, until the chicken turns golden brown and reaches an internal temperature of 165°F (75°C).
- Add bell peppers: Toss in slices of bell pepper—red, yellow, and green. Sauté for an additional 4-5 minutes, allowing them to soften while retaining a little crunch.
- Create the sauce: Pour in heavy cream, stirring well to combine. Bring the mixture to a gentle simmer, allowing it to thicken slightly—about 2-3 minutes.
- Mix in pasta: Add the drained pasta directly into the skillet. Toss gently to combine everything, ensuring that the pasta is coated in the creamy jerk sauce. Add a splash of reserved pasta water if it feels too thick.
- Season to taste: Adjust the flavors with salt, pepper, and a sprinkle of Parmesan cheese, if desired.
- Serve warm: Dish out the pasta, garnishing each bowl with freshly chopped parsley and an extra flourish of Parmesan, if you wish. Enjoy!
Notes
For a healthier version, consider baking the chicken instead of sautéing. Feel free to add spinach or kale for extra nutrition.
