  • 1 Red Bell Pepper, sliced

  • 1 cup Heavy Cream
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 Onion, finely chopped
  • Salt and Pepper, to taste
  • Parmesan Cheese, for optional garnish
  • Fresh Parsley, for garnish

Instructions

  1. Cook your pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente. Once done, drain and set aside, reserving a little pasta water for later if needed.

  4. Add bell peppers: Toss in slices of bell pepper—red, yellow, and green. Sauté for an additional 4-5 minutes, allowing them to soften while retaining a little crunch.
