Description

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Cilantro for garnish (optional)

Instructions

  1. Heat a drizzle of oil in a large pot over medium heat. Toss in the diced onion and sauté until it turns translucent, releasing its sweet aroma.
  2. Add the minced garlic, stirring for an additional minute until fragrant.
  3. Place the chicken breasts into the pot and pour in the chicken broth. Bring this mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
  4. Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
  5. Stir in the canned tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Allow everything to simmer together for another 10 minutes.
  6. Serve the soup hot, generously topped with crunchy tortilla strips and a sprinkle of fresh cilantro, if desired.
