- 1 lb boneless, skinless chicken breasts
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla strips for serving
- Cilantro for garnish (optional)
Instructions
- Heat a drizzle of oil in a large pot over medium heat. Toss in the diced onion and sauté until it turns translucent, releasing its sweet aroma.
- Add the minced garlic, stirring for an additional minute until fragrant.
- Place the chicken breasts into the pot and pour in the chicken broth. Bring this mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
- Stir in the canned tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Allow everything to simmer together for another 10 minutes.
- Serve the soup hot, generously topped with crunchy tortilla strips and a sprinkle of fresh cilantro, if desired.
