- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth (low-sodium)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup long-grain white rice
- Salt & pepper to taste
- Fresh herbs (such as parsley or thyme) for garnish
Instructions
- Heat the olive oil in a skillet over medium-high heat. Season your chicken breasts with salt and pepper, then sear them for 5–7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the same skillet, sautéing for 1–2 minutes until fragrant.
- Pour in the chicken broth and let it simmer.
- Stir in the heavy cream and Parmesan cheese, whisking until smooth.
- Cook the rice according to package instructions and set aside.
- Fold the cooked rice into the sauce mixture.
- Add the cooked chicken back to the skillet and warm through.
- Serve garnished with freshly chopped herbs.
